The council is proposing bringing the food stalls, historic Market House and surrounding area under a single operator.
It also wants to upgrade the market stalls which the authority says have come to the end of their operational life.
Council representatives will be in Ancient Market Place on Thursday between 12 noon and 2pm and then later between 5pm and 7pm.
